I swear I’m wearing makeup. Like, stage make up. Clearly we have a lighting issue in my apartment. Anyway, good news! The next time you see me on Spice Diaries, I’ll have gotten my roots done. Woohoo! A treat for us all, really.

Chicken Tikka (serves 2):
2 chicken breasts, cut into large chunks
3/4 cup low fat plain yogurt
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp whole coriander seeds, crushed lightly with back of knife
1 tsp ground cumin
1 tsp tumeric
Zest of 1/2 an orange
Combine all ingredients except for chicken. Taste for seasoning. Submerge chicken in marinade, make sure it is well coated. Cover and chill for 8-24 hours. When you are ready to grill your chicken, remove from the marinade. Season with salt and pepper. Prepare grill (heat to medium high and oil well). Grill chicken about 7 minutes until cooked through, turning once or twice (don’t move it around too much. You want to get a good sear).
For Yogurt Sauce:
1/2 cup plain low fat yogurt
zest of 1/2 an orange
1/4 tsp ground coriander
1 handful combined fresh mint and cilantro, chopped
Salt t o taste
Combine all ingredients. Season to taste. Serve on top of chicken, along with naan bread, pita, or basmati rice.
