Chicken (or Turkey) Pita Nachos (serves 4)
2 cups poached, pulled chicken or turkey
1 fresh jalapeno, diced
1/2 red onion, diced
1/4 handful fresh cilantro, roughly chopped
1 1/2 cups shredded Monteray Jack cheese
1 8oz. package cream cheese, at room temp
1 1/2 tsp cumin
1/2 tsp chili powder
pinch of salt
black pepper to taste
2 whole wheat pitas, halved
Preheat oven to 375. To poach chicken, bring a pot of well salted water to a simmer.  Submerge boneless, skinless chicken breast for about 15-20 minutes, keeping water at a simmer, until cooked through.  Once cooled, pull the meat into shreds.  Combine all ingredients except pitas in a large bowl.  Spread 1/4 of mixture on each pita half.  Place on cookie sheets, bake in oven about 10 minutes.
