Next up on our farewell to summer tour: the peach.  In warmer months I usually just slice and eat.  They are, in truth, my favorite fruit.  I totally get why the apple is so universally loved, but had I been Eve, I’d have told the snake to beat it, and picked a peach instead.  Just think, we’d all still be in Eden, lazing about and delivering children pain free!  Alas I digress.  Back to my beloved peach. This is a great preparation.  It’s incredibly simple…in minutes you have a healthy, warm and gooey breakfast or dessert. Your whole kitchen will be fragrant, and the spices and maple perfectly meld the glory of summer fruits to the earthy, rich flavors of fall.  If you serve it for breakfast, toast up some whole grain bread to soak up the juices. Here I’ve used sliced almonds as a topping, but switch them out for some crumbled Amaretti cookies and you just as easily have dessert.  That’s right folks, think of this colorful mouthful as your perfect day to night outfit.  All you have to do is change the accessories…

Juicy Peach

Bruleed Peaches with Spiced Maple Yogurt (serves 4)
2 ripe peaches, halved, pits removed
2 tsp brown sugar
½ cup plain fat free yogurt
1 tbsp dark maple syrup
Dash cinnamon
Dash nutmeg
Small handful sliced almonds
Preheat broiler.  Place peaches skin side down on cookie sheet. Sprinkle a light coating of brown sugar on the flesh of each peach and place them under the broiler for about 5-7 minutes until the sugar is melted and bubbly (it should smell like a toasted marshmellow).  While you’re waiting for the peaches, stir together yogurt, syrup and spices.  Pull the peaches from the oven and let them cool, about 3 minutes.  Top each with yogurt sauce and a sprinkle of sliced almonds.
