I’m usually more than a little sad about the return to reality post-vacation.  Particularly if said break involved the beach.  Yet, while my mind is telling me one thing, my body is screaming quite another.  After 4 days of barbeque, beer and daily trips to the ice cream shop, my arteries are clogged as hell and they’re not gonna take it anymore.  I like to load up on something light and healthy the day after vacation (as if one salad is actually going to mend the havoc that five hot dogs wreaked).  This salad is full of heart healthy fats from the olive oil and avocado, and has lots of protein from the chick peas, so it will stick with you.  Add the onion, mint and tomatoes and you have a seriously colorful meal that will assuage the guilt without boring you to tears.  Serve it with a warm whole wheat pita, and go for a walk around the block afterwards.  See?  Your body is less bitter already.

Mediterranean Salad (serves 2)
1 14 oz. can chick peas, drained and rinsed
½ avocado, diced
8 cherry tomatoes, halved
¼ red onion, sliced thin
¼ cup feta cheese, crumbled
1 handful mint, torn into small pieces
Juice of 1 lemon
¼ cup extra virgin olive oil
Salt and pepper to taste
Combine all ingredients, toss to coat with olive oil and lemon juice.  Season to taste.  Serve with warm whole wheat pita.
