I’m baaaack, and just in time for the holiday weekend. Check me out all week for recipes that will get your summer started right, including homemade BBQ sauce, vinegary slaw, smoky bacon baked beans and a blueberry buckle that will get your spirits soaring. My favorite season is upon us. My beach chair is packed and the nav system is set for the coast. Who’s comin’ with me? Can’t get out of town this weekend? No worries, friend. This spicy, sweet, tangy BBQ sauce will bring the taste of summer right to your kitchen. It’s perfect for pulled chicken, or slathered on ribs, salmon, grilled chicken breasts or pork tenderloin. Try this week’s recipes for a taste of summer, no matter where you are.

Homemade BBQ Sauce (makes about 1 quart)
1 tsp Canola oil
½ sweet Vidalia onion, diced
1 garlic clove, minced
1 tsp fresh ginger, minced
½ tsp cayenne pepper
½ tsp cumin
¼ tsp allspice
1 cup diced tomatoes (I like fire-roasted organic Muir Glen)
3 tbsp tomato paste
½ cup cider vinegar
¼ cup dark molasses
3 tbsp dark brown sugar
2 tbsp honey
1 tsp orange zest
2 tbsp Worchestershire sauce
1 tbsp Dijon mustard
Salt and pepper to taste

In a medium saucepan, heat the oil and sweat the onion until translucent, about 2 minutes. Add garlic and ginger, cook, stirring, about 1 minute. Add spices, cook about 30 seconds. Add all other ingredients except mustard. Bring to a boil, then turn to a simmer. Simmer about 30 minutes. Remove from heat, add Dijon mustard. When cool, blend until smooth with an immersion blender. Season to taste with salt and pepper. Enjoy!

Pulled Chicken (serves 4)
3 chicken thighs and 4 drumsticks, bone in, skin on
Salt and pepper
Potato Rolls, toasted lightly
Preheat oven to 400. Season chicken generously with salt and pepper. Roast until cooked through, when a thermometer inserted into the thickest part of each piece registering about 170, and juices running clear, about 30 minutes. Allow to rest about 30 minutes, until cool enough to handle. Remove skin, pull chicken pieces from bone and place in medium sized bowl. Toss pulled chicken with bbq sauce, serve on potato rolls with cole slaw and bake beans (recipes to come!)
